- Add the strawberries to a blender and blend until completely smooth.
- Strain the strawberry puree through a fine mesh strainer if a smoother texture is desired.
- Stir the orange juice and fresh lemon juice into the strawberry puree.
- Taste the mixture and add simple syrup if additional sweetness is desired.
- Divide the strawberry-citrus mixture evenly between two chilled champagne flutes.
- Slowly top each glass with the sparkling non alcoholic wine or sparkling white grape juice.
- Stir very gently once to combine without losing too much carbonation.
- Garnish each glass with a fresh strawberry, orange wheel, or mint sprig.
- Serve immediately while cold and bubbly.
Notes
Use ripe strawberries for the sweetest natural flavor and brightest color.
Frozen strawberries can be substituted after thawing.
Freshly squeezed orange juice provides excellent flavor, but refrigerated orange juice also works well.
Keep all ingredients chilled so ice isn't necessary.
For a less sweet mocktail, choose a dry sparkling non alcoholic beverage and omit the simple syrup.
Prepare the strawberry-citrus base ahead of time, but don't add the sparkling beverage until serving.
