  • 1 cup fresh raspberries
  • 2 tablespoons freshly squeezed lemon juice

  • 1 cup sparkling non alcoholic wine or sparkling white grape juice, chilled

Method
 

  1. Add the raspberries and lemon juice to a blender.
  2. Blend until the raspberries are completely pureed.
  3. Strain the raspberry mixture through a fine mesh strainer to remove the seeds if desired.
  4. Taste the mixture and stir in simple syrup if additional sweetness is needed.
  5. Divide the raspberry-lemon mixture evenly between two chilled champagne flutes.
  6. Slowly top each glass with sparkling non alcoholic wine or sparkling white grape juice.
  7. Stir gently once to combine while preserving the bubbles.
  8. Garnish each glass with fresh raspberries, a thin lemon wheel, or a mint sprig.
