Ingredients
  

  • 1 cup peach puree
  • 1 cup chilled sparkling non alcoholic wine or sparkling white grape juice
  • 1 teaspoon freshly squeezed lemon juice
  • 1 teaspoon simple syrup (optional)
  • Ice cubes (optional)
  • Fresh peach slices, for garnish
  • Fresh raspberries, for garnish (optional)
  • Fresh mint sprig (optional)

Method
 

  1. Blend the peaches until smooth to make the puree.
  2. Strain the puree if a smoother texture is desired.
  3. Stir the lemon juice and simple syrup into the peach puree.
  4. Pour the peach mixture evenly into two chilled champagne flutes.
  5. Slowly top each glass with the sparkling non alcoholic wine or sparkling white grape juice.
  6. Stir gently once if needed.
  7. Garnish with fresh peach slices, raspberries, or a mint sprig.
  8. Serve immediately.

Use ripe peaches for the sweetest flavor.
Frozen peaches can be substituted after thawing.
