  • ¾ cup ripe mango, peeled and cubed
  • ¼ cup passion fruit pulp or passion fruit puree
  • 1 teaspoon freshly squeezed lime juice
  • 1 teaspoon simple syrup (optional)
  • 1 cup sparkling non alcoholic wine or sparkling white grape juice, chilled
  • Fresh mango slices, for garnish
  • Passion fruit halves, for garnish (optional)
  • Fresh mint sprigs, for garnish (optional)

Method
 

  1. Add the mango, passion fruit, and lime juice to a blender.
  2. Blend until completely smooth.
  3. Strain the fruit mixture through a fine mesh strainer if a smoother texture is desired.
  4. Taste the mixture and add simple syrup if additional sweetness is needed.
  5. Divide the mango-passion fruit mixture evenly between two chilled champagne flutes.
  6. Slowly top each glass with the sparkling non alcoholic wine or sparkling white grape juice.
  7. Stir gently once to combine while preserving the bubbles.
  8. Garnish each glass with a fresh mango slice, passion fruit half, or mint sprig.
  9. Serve immediately while cold and bubbly.
